So you are thinking about becoming a vegan? Or maybe you are just trying to spice things up a little bit. Either way, a little interest goes a long way. I sincerely thank you for your interest as this lifestyle change is very new to me. In fact, that was all it took to get me started; a little interest!
That is why you’re reading this right? Something has to change, and reading this blog alone is the first step towards making the changes that you want and need in your life. One step at a time, it’s the only way, and every step counts. Feel free to congratulate yourself for your progress and then keep on moving.
My philosophy in life has always been quite simple, either we want to do something or we don’t, period. It is that motivation alone that influences and ultimately determines the outcome of our success. Summing it up, we are more likely to succeed at the things that we want and choose to do. So do what you like, period!
Unless of course you are in a situation where you have been forced to look at your eating habits and make adjustment to your lifestyle, which can create a sense of rebellion and resentment for not having a choice. Yet you always have a choice, remember that! Start with the choice of building a better relationship with your body. Start with choosing to be more mindful about what you are putting in your body, and go from there. You have to start somewhere.
I know you may have your concerns because I did too! What do you eat, and how do you fill up? Oh, and my all time favorite is currently, ‘how do you get your vitamins”? (Lol duh, the same way you do, from food hello!) Yet I am sure there will be more questions, in fact, I hope for more. Please, I invite all questions, concerns, and advice as I create my own path on this new and enlightening journey. Less than a year in, I am definitely still learning but believe me when I say that I am loving every minute of it!
Learn to like new things and embrace the changes that your mind and body will endure. Choose to be more open-minded towards different recipes and you will be surprised at how big of an impact it has on your life. Change doesn’t have to be drastic (most of the time drastic and impulsive decisions do not last); gradual adjustments here and there are more likely to stick, and they are most realistic when trying to change long-embedded habits…
Plus, adjusting ingredients and seasonings gradually makes the transition to living a meatless lifestyle less stressful and overwhelming, and hands down much more fun!
Here’s a little snack that might help motivate the cause lol It is quick, easy, and super good! Banana bites are comfort food at its best… I truly hope you love.
Banana Bites
Servings: 1
Cook Time: 10 minutes (prep included)
Ingredients
- 2 tablespoons shredded unsweetened coconut
- 1 banana peeled and sliced (about ¼ in thick slices; bites will break apart if too thin and under-cook if too big)
- 1/2- 1 teaspoon cinnamon or clove powder (or both)
- a pinch of sea salt
- 2 tablespoons avocado or grapeseed oil
Directions
- Combine cinnamon (clove powder), coconut, and salt in a bowl and mix.
- Press each banana slice into the mixture until coated. Repeat on other side.
- Heat the oil over medium heat on the stove top.
- Gently place coated banana slices in the pan with the heated oil and saute for about 3 minutes on each side.
- Remove from heat and let cool for a few minutes (A cooling rack helps add to the crispness but it is not a necessity).
- Eat and enjoy.
Note: If the bananas are not ripe or sweet enough, just add a little agave or date syrup drizzle to help sweeten them up and feel free to hold the sea salt if you are watching your sodium!!
Love. Love love this Banana Bite recipe! At first I was skeptical about even trying anything that sounds remotely healthy because they were boring and bland or contained so much aspartame (store bought)it is a buzz kill. I recently discovered this site through word-of-mouth and I was completely satisfied with the knowledge and information that was simple and easy to understand I can’t wait to see more, keep up the awesome work
